Herbes de Mallorca are a spirit category of their own with a protected geographical indication. Anise forms the base, joined by island herbs such as rosemary, fennel and lemon verbena, plus orange and lemon leaves. Three styles exist: dulces, secas and mescladas.

In the glass

Anise to the fore, with the herbal note behind it and more or less sweetness depending on the style. The dry version lets the herbs show more clearly.

Serving

Ice-cold and neat after a meal — the usual way on Mallorca. Also with soda and ice as a longer drink.
