Gin from Vilanova i la Geltrú on the Catalan coast. Alongside juniper the recipe carries Arbequina olive, thyme, rosemary and basil — each botanical is macerated and distilled separately, then brought together.

In the glass

Herbal and saline rather than juniper-sharp. The olive lends an unusual, almost savoury note, and the finish stays dry.

Serving

Gin and tonic with a sprig of rosemary and an olive instead of lemon. With tapas and anything from the grill.
